Here is the recipe for the corn casserole.
1 can cream style corn
1 can regular corn, undrained
3 or 4 eggs (depending on size), lightly beaten
1/2 cup of oil (I use corn oil or canola)
1 cup shredded cheddar cheese
1 onion, finely chopped
Pinch of salt
1 package of Jiffy Corn muffin mix
Use corn undrained. Add beaten eggs, oil,salt and onions. Mix with Jiffy mix and 1/2 cup of the cheese.
Pour into a lightly grease 9"X13" dish. Top with remaining cheese. Bake 45 minutes in a 350 degree oven.
This is so easy to make and is great to bring to pot-luck dinners.
